- Chop red onion, all three bell peppers, and cucumbers to about the same size and place them in to a big salad bowl.
- Slice all tomatoes in half and add to the bowl.
- Mix together your rainbow of veggies & enjoy with your dressing of choice.
Notes
This chopped salad is great as a side, can be turned into a full salad with added protein, and stores well by itself in the fridge for days, making it a great meal prep option. Eat it alone, add it to power bowls, or wraps. Sky's the limit.
