Mama's Chopped Salad

This refreshing make ahead or chow down now veggie mix is perfection!
Prep Time 25 minutes
Course: Salad

Ingredients
  

  • ½ red onion (chopped)
  • 1 large yellow bell pepper (chopped)
  • 1 large orange bell pepper (chopped)
  • 1 large red bell pepper (chopped)
  • 1 lb. cucumbers of choice (chopped)
  • 10 oz. cherry tomatoes of choice (sliced in half)

Equipment

  • 1 sharp chopping knife
  • 1 large salad bowl
  • 1 cutting board

Method
 

  1. Chop red onion, all three bell peppers, and cucumbers to about the same size and place them in to a big salad bowl.
  2. Slice all tomatoes in half and add to the bowl.
  3. Mix together your rainbow of veggies & enjoy with your dressing of choice.

Notes

This chopped salad is great as a side, can be turned into a full salad with added protein, and stores well by itself in the fridge for days, making it a great meal prep option. Eat it alone, add it to power bowls, or wraps. Sky's the limit.
